Hoppin John - cooking recipe

Ingredients
    1/2 c. chopped green peppers
    1 Tbsp. chopped onion
    2 Tbsp. butter
    2 Tbsp. flour
    3/4 tsp. chili powder
    1/4 tsp. cumin
    1 1/4 c. milk
    1 c. shredded Cheddar
    1 (15 oz.) can black-eyed peas, drained
    1 c. cooked brown rice
    3/4 c. diced ham
    2 beaten eggs
Preparation
    Cook pepper and onions in butter until tender.
    Stir in next 3 ingredients.
    Stir in milk.
    Cook and stir until bubbly.
    Remove from heat.
    Stir in 3/4 of the cheese and the remaining ingredients.
    Turn into a well-greased 8 x 8 x 2-inch baking dish. Bake at 350\u00b0 for 30 minutes or until set.
    Top with remaining cheese.
    Let stand for 5 minutes.
    Cut into squares.
