Stuffed Mushrooms - cooking recipe

Ingredients
    nonstick cooking spray
    1 1/2 lb. medium-size mushrooms with stems, rinsed
    3 Tbsp. olive oil
    1/2 c. finely chopped yellow onion
    2 cloves garlic, minced
    1 tsp. chopped fresh thyme or 1/4 tsp. dried thyme leaves
    2 c. shredded, unpeeled zucchini
    1/4 c. finely chopped sweet red pepper
    1/2 tsp. salt
    1/4 tsp. black pepper
    1/2 c. plain dry bread crumbs
    2 Tbsp. minced parsley
    5 Tbsp. grated Parmesan cheese (1 1/4 oz.)
Preparation
    Preheat oven to 375\u00b0.
    Coat a large shallow baking pan with cooking spray.
    Remove the mushroom stems and chop coarsely. Arrange the mushroom caps on pan, cavities facing up.
    Brush insides and edges with 2 tablespoons of the oil.
