Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 small minced onion
    2 eggs
    2 slices bread, broken
    3/4 c. grated Cheddar cheese
    1 c. milk
    1 stick margarine
    salt and pepper
    cracker crumbs
Preparation
    Cook peeled and dried eggplant in boiling water about 10 minutes.
    Drain well.
    Beat eggs and mix with milk.
    Soak bread in milk-egg mixture.
    Add onion, cheese, salt, pepper and eggplant. Mix well.
