Ingredients

2/3 c. butter, softened
1 c. brown sugar, packed
1 egg
1 tsp. vanilla
1 c. all-purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
2 1/2 c. oatmeal
1 c. semi-sweet chocolate chips
2 c. vanilla ice cream
Preparation

Cream butter with brown sugar until light and fluffy; add egg. Beat well.
Add vanilla.
Sift flour with cinnamon, salt and baking soda.
Stir into butter mixture, mixing well.
Add oatmeal. Stir until well combined.
Roll cookie mixture into 12 to 14 equal balls.
Place on an ungreased cookie sheet.
Flatten balls to 3 inch diameter.
Bake at 375\u00b0 for 12 to 14 minutes until golden brown but still soft.
Cool completely on a wire rack.
