Chicken Dijon - cooking recipe

1/3 c. Dijon mustard
2 Tbsp. honey
2 Tbsp. lime juice
1 Tbsp. water
1 1/2 tsp. grated lime peel
4 skinless, boned chicken breasts
lettuce leaves
Preparation

Preheat oven to 350\u00b0.
Whisk together mustard, honey, lime juice, water and lime peel.
Place chicken in shallow ovenproof casserole. Set aside 1/4 cup mustard sauce.
Pour remaining sauce on chicken. Cover and bake 20 minutes.
Uncover.
Spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked.
Arrange chicken on lettuce leaves. Add 2 to 4 tablespoons of remaining sauce from casserole to reserved sauce and heat through.
Pour over chicken and serve. Serves 4.
Preparation time is 15 minutes. Cooking time is 30 minutes.
