Old Timey Head Cheese - cooking recipe

Ingredients
    6 lb. ground cooked meat
    2 tsp. salt
    4 tsp. pepper
    3 or 4 bay leaves
    1 small onion
    2 tsp. red pepper
    2 1/2 tsp. allspice
    3 tsp. cloves
    2 tsp. poultry seasoning
    1 Tbsp. sage
    1 pkg. Knox gelatine
Preparation
    Clean hogs head by removing snout, ears, eyes, brains and all skin.
    Trim off all fat.
    Cut head in four pieces and soak in salt water (1/2 cup salt to 1 gallon
    water) for 3 to 5 hours to draw out all blood.
    Drain and wash well in clear water.
