Lulu'S Red Roast - cooking recipe

Ingredients
    4 lb. eye of round roast
    1 large green bell pepper
    1 small onion, chopped
    3 to 4 cans Campbell's tomato soup
    2 Tbsp. oil
Preparation
    Trim eye of round as needed. Leave some fat. Add 2 tablespoons oil to large pan. Place on stove. Brown roast on all sides. About 15 minutes after browned, remove from pan and place chopped green peppers and onions in the pan. Cook over medium heat for 5 minutes. Add soup; do not dilute. Stir to blend. Place browned roast back into pan and spoon tomato gravy over roast. Cover and cook on low heat on top of stove for 2 to 2 1/2 hours.
