Ingredients

1 (3 to 4 lb.) half leg of lamb
1/4 c. prepared mustard
1/4 c. honey
1/2 tsp. salt
1/8 tsp. pepper
Preparation

Place lamb, fat side up, on a rack in a shallow roasting pan. Insert meat thermometer, making sure it does not touch fat or bone.
Bake at 325\u00b0 for one hour.
Combine mustard, honey, salt and pepper; mix well and spoon over lamb.
Bake an additional 45 minutes to one hour or until meat thermometer registers 160\u00b0.
Let stand 10 minutes before carving.
Yield:
4 to 6 servings.
