Vegetable Lasagna - cooking recipe

Ingredients
    1 lb. Ricotta cheese (part skim)
    1/4 c. grated cheese (Parmesan)
    1 c. each: chopped onion and celery
    1 carrot, shredded
    1 pkg. chopped spinach
    1 box lasagna noodles
    1 bag grated Mozzarella cheese (12 oz.)
    1/4 tsp. salt
    ??? tsp. pepper
    1/8 tsp. nutmeg
    2 tsp. minced parsley
    2 eggs or 1 c. Egg Beaters
Preparation
    Mix Ricotta, eggs, pepper, grated cheese, nutmeg and parsley in large bowl.
    Add vegetables and salt in other bowl.
    Cook noodles according to directions on box.
