Chicken Tarragon - cooking recipe

Ingredients
    6 to 8 chicken breast pieces, skinned and boned
    salt and pepper
    1/4 c. flour
    1/4 c. butter or margarine*
    1 Tbsp. chopped onion
    1/4 c. dry white wine*
    1/2 tsp. dried tarragon or 1 tsp. freshly chopped
    1/4 c. chicken broth*
    1/4 c. heavy cream*
Preparation
    Sprinkle chicken with salt and pepper; dredge with flour (reserving excess flour).
    Heat 3 tablespoons butter in large skillet, brown chicken and remove from skillet.
    Add onions to skillet and saute.
    Add wine to onions and cook over high heat until nearly evaporated.
    Add reserved flour and stir to make paste.
    Sprinkle with tarragon; stir in broth.
    Return chicken to skillet, cover and cook until tender (about 25 minutes).
    Transfer chicken to platter.
    Add remaining butter and cream to skillet. Heat while stirring.
    Serve this sauce over chicken.
