Ingredients

5 to 6 potatoes, peeled and grated
1 small onion, chopped
1 clove garlic, minced
1 egg, beaten
1/4 c. flour
1 tsp. cornstarch
2 c. Blue cheese, crumbled
1 tsp. white pepper
butter or oil
applesauce
Preparation

Grate potatoes.
Rinse in cold water.
Drain.
In bowl, mix potatoes, onion, garlic, egg, flour, cornstarch, white pepper and 1 1/2 cups Blue cheese.
Preheat skillet.
Coat with butter or oil. Pour mix into pan.
Pat down firmly to make one big pancake.
Fry until golden brown on one side.
Slice onto plate and invert onto another plate.
Slide back into frypan.
When browned, move onto serving plate.
Sprinkle with remaining Blue cheese.
Accompany with warm applesauce.
Serve hot.
Makes 4 to 6 servings.
