Curried Shrimp(Serves 8) - cooking recipe

Ingredients
    1/4 c. butter
    1 Tbsp. curry powder
    1/2 c. sliced celery
    1/2 c. chopped green pepper
    1/4 c. chopped parsley
    5 Tbsp. all-purpose flour
    1 tsp. salt
    3 c. milk
    1 1/2 c. (6 oz.) shredded Cheddar cheese
    2 lb. shrimp
    1/4 c. chopped pimento
    2 Tbsp. butter
    1 can chow mein noodles
    1 (4 oz.) pkg. coconut
    1/2 c. peanuts
    hot cooked rice
Preparation
    Melt 1/4 cup butter in 3-quart saucepan; stir in curry powder. Add celery, green pepper and parsley.
    Saute 2 or 3 minutes. Stir in flour and salt.
    Remove from heat; gradually stir in milk.
    Cook over medium heat, stirring until thick.
    Cook 2 additional minutes.
    Remove from heat and stir in cheese until melted.
    Add shrimp and pimento.
    Heat to serving temperature; do not boil.
