Scotch Eggs - cooking recipe

Ingredients
    1 1/2 lb. pork sausage meat
    1 medium onion
    2 Tbsp. chopped parsley
    2 tsp. ground cumin
    9 eggs
    2 Tbsp. plain white flour
    7 oz. fresh white bread crumbs
    oil (enough for deep frying)
Preparation
    Place meat in large mixing bowl.
    Mix in finely chopped onion; add sausage, parsley and cumin.
    Cover and refrigerate while boiling 6 eggs.
    Roll eggs in flour until very dry.
    Divide meat by 6.
    Flatten to ovals 2 times the size of an egg.
    Mold meat mix around egg.
    Beat 3 raw eggs.
    Roll coated eggs in a little flour, then dip into beaten egg, then dip into bread crumbs.
    Place eggs on plate; chill for at least 30 minutes. Heat oil in deep fryer to 375\u00b0.
    Fry 2 or 3 eggs for 10 minutes or until meat is cooked and coating is golden brown.
    Drain.
