Three Cheese Manicotti - cooking recipe

Ingredients
    1 1/2 c. water
    1 (8 oz.) can tomato sauce (1 c.)
    1 pkg. spaghetti sauce mix
    2 (8 oz.) c. shredded Mozzarella cheese
    1 (8 oz.) c. Ricotta or creamed-style cottage cheese
    1/2 c. grated Parmesan cheese
    2 eggs, beaten
    1/4 c. snipped parsley
    8 manicotti shells, cooked and drained
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    In small saucepan, blend water, tomato sauce and spaghetti sauce mix; simmer uncovered for 10 to 12 minutes.
    Meanwhile, combine 1 cup Mozzarella, Ricotta and Parmesan cheese.
    Add eggs, parsley, salt and pepper.
    Mix lightly; stuff shells with cheese mixture using about 1/2 cup of mixture for each.
    Pour half of spaghetti sauce into 2-quart or 11 3/4 x 7 1/2 x 1 3/4-inch baking dish; arrange stuffed manicotti in dish.
    Pour remaining sauce over top.
    Sprinkle remaining 1 cup cheese and bake at 350\u00b0 for 25 to 30 minutes.
