Chicken Monterey - cooking recipe
Ingredients

boneless, skinless chicken breasts
Dijon mustard
olive oil
1/2 to 1 c. vermouth
green onions, chopped
2 pats oleo
Monterey Jack cheese, shredded
Preparation

Flatten chicken breasts with meat mallet. Spread Dijon mustard on one side of each chicken breast. Sprinkle shredded Monterey Jack cheese over mustard and roll chicken breast so mustard and cheese sides are on inside. Secure with toothpick. Coat bottom of skillet with olive oil.
Heat 2 pats of oleo or 1 teaspoon in skillet. Add rolled chicken breasts to heated skillet.
Lightly brown chicken, then add vermouth and green onions. Cook, uncovered, over medium heat until chicken is done (10 to 20 minutes depending on thickness of chicken breasts). Continue adding more vermouth as liquid evaporates.
