Brandy Cream Sauce - cooking recipe

Ingredients
    2/3 c. sugar
    3 Tbsp. brandy
    pinch of salt
    1 tsp. grated orange rind
    2/3 c. water
    3 egg yolks, beaten until light and creamy
    1/2 c. heavy cream
Preparation
    Combine sugar, water and salt in a medium size saucepan and bring to a slow simmer.
    Hold there for about 10 minutes; set aside.
    Combine egg mixture, cream, brandy and orange rind. Gradually add the sugar syrups to the egg and cream mixture, stirring constantly until it is cooled and thickened.
    Serve over sponge or pound cake.
    Makes 2 cups sauce.
