Ingredients

4 oz. cream cheese, softened
1 pkg. nondairy topping mix
2 tsp. vanilla
2 (3 oz.) pkg. instant vanilla pudding mix
whipped cream
1/4 c. sugar
1/2 c. milk
1 c. flaked coconut
1 c. toasted coconut
2 baked 8-inch pie crusts
Preparation

Combine cream cheese, sugar, topping mix, milk and vanilla. Beat until light and fluffy.
Pour into pie crusts.
Spread 1/2 cup coconut on each pie and chill.
Prepare instant pudding mix according to directions.
Add 1 teaspoon vanilla; pour over cream cheese layer.
Garnish with whipped cream and toasted coconut.
