Mid-Season Apricot Jam - cooking recipe

Ingredients
    1 lb. dried apricots, cut up
    1 (20 oz.) can crushed pineapple and juice
    2 1/2 c. sugar
    1 c. orange juice
    1/4 to 1/2 tsp. salt
    1/2 c. slivered almonds
Preparation
    In a large saucepan cover apricots with water.
    Boil for 15 to 20 minutes.
    Drain water; then add pineapple, sugar, orange juice and salt.
    Stir until sugar dissolves and mixture boils.
    Cook, uncovered, until mixture thickens (stir often to prevent scorching) about 30 to 40 minutes, depending on size of open pan. Add almonds and place in jars to cool.
    Store in refrigerator. Recipe makes 3 1/2 to 4 pints.
