Baked Cauliflower - cooking recipe

Ingredients
    1 medium head cauliflower
    1 (1 lb.) can stewed Italian or Mexican style tomatoes
    2 eggs, slightly beaten
    1 can cheese soup (nacho optional)
    1/4 c. grated Parmesan cheese
    1 tsp. oregano
Preparation
    Wash cauliflower and break into flowerets.
    Place into baking dish with little water.
    Microwave just until crisp; drain. Combine tomatoes with eggs.
    Pour over cauliflower.
    Spoon soup over tomatoes.
    Sprinkle cheese and oregano over soup.
    Bake at 350\u00b0 for 30 minutes or until custard is set.
