Shrimp Creole - cooking recipe

Ingredients
    5 lb. peeled fresh shrimp
    1/2 c. flour
    2/3 c. oil
    2 c. hot water
    2 (8 oz.) tomato sauce
    1 qt. whole tomatoes, diced
    1 large onion, chopped
    dash of cayenne pepper
    2 c. rice
    1 small can white crab meat (optional)
    1 bunch green onion and tops, chopped
    2 1/2 to 3 tsp. salt
Preparation
    Blend flour into oil, stirring constantly over medium heat and brown.
    Add water gradually and cook until thick and smooth, stirring constantly.
    Add remaining ingredients, except rice.
    Add shrimp last.
    Cover and simmer 20 minutes.
    Serve over rice with crackers.
    Very, very good.
