Giant Blueberry Muffins(Fat-Free) - cooking recipe
Ingredients

1 1/2 c. fresh blueberries
2 Tbsp. sugar
2 2/3 c. flour
3 heaping Tbsp. sugar
3 3/4 tsp. baking powder
1 tsp. salt
Egg Beaters equivalent to 2 eggs
1 c. skim milk
1/2 c. applesauce
1 1/2 tsp. sugar
Preparation

Heat oven to 375\u00b0.
Toss blueberries with 2 tablespoons sugar. Set aside.
Stir flour, sugar, baking powder and salt together. Combine Egg Beaters, skim milk and applesauce and add to dry ingredients.
Stir only until ingredients are moistened.
Gently stir blueberries into batter.
Divide evenly into muffin pan sprayed lightly with nonstick spray coating.
Sprinkle top of each muffin with 1/4 teaspoon of sugar.
Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
Let cool about 5 minutes in pan, then remove and cool.
Yield:
6 giant muffins.
