Ingredients

3 eggs, separated
1 7/8 c. milk
1/4 c. oil
2 c. flour
2 Tbsp. sugar
2 Tbsp. baking powder
1 tsp. salt
1 Tbsp. vanilla
Preparation

Beat egg whites separately.
Mix all ingredients except egg whites until smooth.
Fold in whites.
Grease heated griddle with butter. Turn pancakes as soon as they are puffed and full of bubbles.
