Sweet Potato Souffle - cooking recipe
Ingredients

6 medium sweet potatoes
1 c. drained crushed pineapple or applesauce
1 tsp. salt
1/2 c. brown sugar
3 eggs
grated rind of 1 lemon or orange
cinnamon and nutmeg to taste
Preparation

Boil sweet potatoes until tender, then peel.
In electric mixer, mash potatoes with all other ingredients until well blended.
Turn into a greased casserole.
Bake at 350\u00b0 for 30 to 40 minutes.
