Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1 tsp. onion, grated
    1/2 c. cracker crumbs
    3 Tbsp. flour
    1 tsp. baking powder
    1 egg, beaten
Preparation
    Peel eggplant and cut into small pieces.
    Boil in salted water until tender.
    Drain well and mash.
    Stir in other ingredients and mix well.
    Drop by tablespoonfuls onto a well-greased griddle. Fry on both sides until golden brown.
    Yields 4 to 6 servings.
