Baked Chicken - cooking recipe

Ingredients
    3 to 5 lb. whole chicken
    1 small onion, chopped
    2 stalks celery, chopped
    salt and pepper
Preparation
    Wash and dry chicken.
    Rub all over with salt and pepper.
    Put celery and onion in the cavity; cover and bake at 325\u00b0 for 2 hours. Uncover and bake at 400\u00b0 for 15 minutes to brown chicken.
    Chicken is done when the leg bone moves easily.
    Transfer all stock in the bottom of the dish to a saucepan and add 1 to 1 1/2 cups water. Add the onion and celery from the cavity and mix well.
