Broccoli Soup - cooking recipe
Ingredients

2 c. chopped celery
2 c. chopped onions
2 lb. chopped broccoli (frozen or fresh)
chicken broth
2 tsp. salt
2 tsp. nutmeg
1 tsp. white pepper
6 to 8 c. whole milk
1 lb. cubed Velveeta cheese
1/4 lb. grated Cheddar cheese
Preparation

Simmer celery, onions and broccoli in enough chicken broth to cover the vegetables and simmer until soft.
Add the salt, pepper, nutmeg and milk.
Heat until almost boiling, but do not boil. Thicken with a cornstarch mixture (starch and water).
Add the cheeses.
Stir and remove from heat.
Cover and let stand for 10 minutes.
Stir again to blend in cheese.
