Nigerian Peanut Soup - cooking recipe

Ingredients
    3 c. beef broth
    1 c. roasted peanuts, ground fine
    2 to 3 small dried hot red chili peppers or 1/2 tsp. dried hot red pepper flakes
    1 small green bell pepper, minced
    1 small onion, minced
Preparation
    In a saucepan, heat the broth to a bare simmer and in a small bowl, stir together the peanuts and 1/2 cup of the broth until the mixture forms a paste.
    Stir the peanut paste into the simmering broth; add the chili peppers, the bell pepper and the onion and bring the mixture to a boil.
    Simmer the soup, stirring occasionally, for 15 to 20 minutes, or until it thickens to the desired consistency and season it with salt and pepper.
    Makes about 4 cups, serving 2 to 4.
