Oriental Stuffed Potatoes(Microwave) - cooking recipe

Ingredients
    4 Idaho baking potatoes
    8 oz. skinned and boned
    chicken breast, cut in strips
    1 small carrot, sliced thin
    1 c. thinly sliced red or green bell peppers
    1/4 lb. snow peas
    2 Tbsp. vegetable oil
    1 garlic clove, cut in half
    1 tsp. minced ginger root
    1 Tbsp. cornstarch
    1/2 c. chicken broth
    2 Tbsp. soy sauce
    2 Tbsp. plus 2 tsp. butter
    salt and pepper to taste
Preparation
    Wash and dry potatoes.
    With fork, pierce each twice.
    Place potatoes on paper towel in microwave.
    Cook on High for 15 to 17 minutes.
    Remove and set aside.
