Baked Eggplant - cooking recipe

Ingredients
    1 eggplant, peeled and sliced 1/4-inch thick
    mayonnaise
    cracker crumbs
    Parmesan cheese
Preparation
    Preheat oven to 350\u00b0.
    Spread each side eggplant slices with mayonnaise, coat with cracker crumbs.
    Sprinkle with Parmesan cheese and arrange 1 inch apart on a greased cookie sheet.
    Bake until golden brown.
    Turn and bake until browned on second side. Serve immediately.
