Grandma Sally Delong'S Sweet Potato Custard - cooking recipe

Ingredients
    8 medium sweet potatoes
    1 1/2 c. sugar
    3 whole eggs
    dash of cinnamon
    dash of ginger
    dash of nutmeg
    1 Tbsp. vanilla flavoring
    dash of salt
    hot water (for consistency)
Preparation
    Cook 8 medium sweet potatoes in 2 cups water.
    Pour off water. Let cool
    and peel.
    Add to potatoes 1 1/2 cups sugar, 3 whole eggs
    and
    dash
    of salt, cinnamon, ginger and nutmeg. Stir thoroughly.
    Add vanilla flavoring.
    Add enough hot water until consistency
    is
    smooth.
    Pour
    into 2 (9-inch) uncooked pie shells;
    bake
    at 350\u00b0 until golden brown.
    Recipe is over 100 years old.
