Potatoes And Chicken Dijon - cooking recipe

Ingredients
    4 medium potatoes
    1 lb. chicken breast, skinned and sliced 1/2-inch thick
    2 Tbsp. vegetable oil
    1/4 c. honey Dijon barbecue sauce
    1 tsp. dried tarragon
Preparation
    Slice potatoes 1/4-inch thick and microwave 8 to 10 minutes until tender.
    In large skillet, toss and brown chicken in oil over high heat 5 minutes.
    Add potatoes; saute and toss until potatoes are light brown.
    Add barbecue sauce and tarragon.
    Heat until thoroughly heated.
    Serves 4.
