Coconut Muffins - cooking recipe
Ingredients

1/2 c. flour
1/8 tsp. salt
1/4 c. butter or margarine
1/3 c. sugar
few drops of almond extract
1 egg
1/3 c. toasted coconut
powdered sugar (optional)
Preparation

Grease and lightly flour 6 muffin cups.
In small bowl, stir flour and salt.
In another bowl, beat butter or margarine for 30 seconds.
Add sugar and almond extract; beat until fluffy.
Add egg and beat mixture for 1 minute.
Add flour mixture to beaten mixture.
Stir in toasted coconut.
Fill muffin cups 2/3 full. Bake in a 375\u00b0 oven for 20 to 25 minutes.
Sprinkle powdered sugar on cooled muffins.
Yields 6.
