Slim Scampi-Style Shrimp On Skewers - cooking recipe

Ingredients
    1 lb. large raw shrimp, peeled
    3 Tbsp. light Italian-style salad dressing
    2 Tbsp. lemon juice
    2 or more cloves garlic, minced
    salt, pepper and red pepper flakes to taste
    minced fresh parsley and lemon wedges (optional)
Preparation
    Carefully shell, clean and devein shrimp.
    (Butterfly, if desired.)
    Combine in plastic bag with remaining ingredients (except parsley and lemon).
    Drain shrimp and thread on skewers; reserve marinade.
    Broil or barbecue shrimp, 4 to 5-inches from heat source for about 2 minutes each side, until pinkish and opaque.
    Brush with reserved marinade after turning.
    If desired, garnish with parsley and lemon.
    Makes 4 servings; about 160 calories each.
