Savory Vegetable Cheesecake(6 To 8 Servings) - cooking recipe

Ingredients
    3 c. coarsely grated zucchini
    3 Tbsp. butter
    1 c. minced onion
    2 to 3 cloves garlic
    1/2 tsp. salt
    1 c. grated carrot
    3 Tbsp. flour
    1/2 tsp. basil, oregano
    1/4 c. freshly minced parsley
    1 Tbsp. fresh lemon juice
    3 c. no-fat Ricotta cheese
    1 c. grated Mozzarella
    1/2 c. grated Parmesan
    4 large eggs (room temperature)
    freshly ground black pepper
    2 medium tomatoes, sliced into 1/2 rounds, dredged in 3 to 4 Tbsp. fine bread crumbs
Preparation
    Set grated zucchini in a colander over sink or bowl.
    Salt lightly and let stand 15 minutes.
    Squeeze out moisture.
