Karen'S Lemon Chicken - cooking recipe

Ingredients
    3 Tbsp. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. olive oil
    1 medium onion, chopped
    1 Tbsp. butter
    1 c. chicken broth
    3 Tbsp. lemon juice
    1/2 tsp. thyme
    2 Tbsp. chopped parsley
    4 boneless, skinless chicken breasts
Preparation
    In a plastic or paper bag, combine flour, salt and pepper; shake to mix.
    Add chicken, one piece at a time, and coat lightly. Save the remaining flour mixture.
    In a skillet, warm 1 tablespoon of the oil over medium heat.
    Add chicken and brown one side of chicken.
    Add remaining oil and brown the other side of chicken.
    Remove chicken.
    Add butter and onion.
    Cook until onion is tender.
    Add remaining flour; mix well.
    Add broth, lemon juice and thyme; bring to a boil.
    Stir constantly.
    Return chicken to pan.
    Reduce heat.
    Simmer about 5 minutes.
