Chicken Breasts Dianne - cooking recipe

Ingredients
    4 large boneless chicken breast halves or 8 small
    2 Tbsp. olive or salad oil
    3 Tbsp. chives or green onion
    3 Tbsp. chopped parsley
    juice of 1/2 lemon or lime
    1/2 tsp. salt
    1/4 to 1/2 tsp. pepper
    2 Tbsp. butter or margarine
    2 Tbsp. brandy or cognac
    2 Tbsp. Dijon mustard
    1/4 c. chicken broth
Preparation
    Place chicken breasts between sheets of waxed paper or plastic wrap; pound slightly.
    Sprinkle with salt and pepper.
    In a microwave dish, melt butter and mix with oil.
    Place chicken breasts in dish, coating breasts on both sides.
    Microwave at High power for 3 minutes; let rest for 1 minute.
    Turn breasts over.
