Party Shrimp - cooking recipe
Ingredients

1/2 c. lemon juice
3 Tbsp. olive oil
1/3 c. packed finely chopped fresh parsley
1/4 c. thinly sliced scallions (white part and about 3 inches green)
1/4 c. finely chopped red onion
1/4 tsp. salt
1/8 tsp. ground red pepper
1 lb. medium raw shrimp, shelled and deveined
Preparation

In a large bowl combine everything except shrimp.
Place shrimp in boiling water and cook until pink (just done).
Drain and transfer to marinade.
Mix and turn to coat.
Cover and refrigerate several hours or overnight.
Serve using toothpicks.
