Chicken Sergio - cooking recipe

Ingredients
    4 boneless skinless chicken breasts
    3 sprigs Italian parsley
    1/2 lb. mushrooms
    1/2 c. dry white wine
    6 shallots, peeled
    1/2 tsp. minced fresh tarragon
    1/4 c. drained capers
    3 Tbsp. Dijon mustard
    ground pepper to taste
Preparation
    Flatten chicken breasts slightly.
    Pour 1/4 cup wine into a heavy skillet; place over medium heat.
    Add chopped shallots and sliced mushrooms into pan.
    Stir.
    Add parsley, tarragon and capers.
    Add chicken and cook 2 to 3 minutes.
