Chicken Breast Diane - cooking recipe

Ingredients
    4 large boneless chicken breasts
    1/2 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. olive oil
    2 Tbsp. butter
    3 Tbsp. chopped onion
    juice of 1/2 lemon
    3 Tbsp. parsley, chopped
    2 tsp. Dijon mustard
    1/4 c. chicken broth
    chopped chives
Preparation
    Sprinkle chicken breasts with salt and pepper.
    Heat 1 tablespoon each oil and butter in large skillet.
    Cook chicken over high heat for 4 minutes on each side.
    Transfer to platter. Add chives, onions, lemon juice, parsley and mustard to pan.
    Cook 15 seconds, stirring constantly.
    Whisk in broth.
    Stir until sauce is smooth.
    Add remaining butter and oil.
    Stir.
    Serves 4.
