Holiday Rice Salad - cooking recipe

Ingredients
    2 1/2 c. rice
    5 c. chicken broth
    1/4 c. parsley
    1 large jar chopped pimentos
    3 stalks celery, chopped
    1 large green pepper, chopped
    1 c. green olives
    3 small jars artichoke hearts (save the oil/juice)
    2 c. mayonnaise
    1 tsp. curry powder
Preparation
    Cook rice in
    chicken
    broth
    and let cool.
    Add in the rest of the ingredients and toss together with the mayonnaise, curry powder and oil/juice from the artichoke hearts.
    Enjoy.
