Potato Dumplings - cooking recipe
Ingredients

2 1/2 c. mashed potatoes
1 egg, whole
1 egg yolk
1/8 lb. butter
Salt and pepper to taste
Flour
Parmesan cheese (optional)
Preparation

Boil potatoes in skin; when done, peel and grind. Mix with eggs and butter and salt and pepper to taste. Add enough flour to make dough. Form into a roll about size of broom stick (1 inch). Cut into 1 1/2 inch pieces, drop pieces into boiling salt water. When they float, remove and rinse in cold water; put into casserole and add butter. Put in oven to warm. Can be served with Parmesan cheese. Next day left-overs can be deep fried.
