Nutritious Low-Fat Blueberry Muffins - cooking recipe

1 c. whole wheat flour
1 c. enriched flour
2 tsp. baking powder
1/2 tsp. salt (optional)
2 Tbsp. corn oil
1/3 c. brown sugar
2 egg whites
1 c. skim or low-fat milk
1 c. fresh blueberries
Preparation

Preheat oven to 400\u00b0.
Coat muffin pan with nonstick cooking spray or use paper cups.
Combine flours, salt and baking powder. In a separate bowl, combine oil, sugar, egg whites and milk.
Add liquid mixture to dry ingredients and mix together.
Stir berries lightly into the batter.
Spoon the batter into muffin tin.
Bake for 15 to 18 minutes or until slightly brown.
