Creamless Celery Potato Soup - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    3 c. sliced celery
    2 c. (about 1 lb.) diced potatoes
    1 c. chopped onions
    1 tsp. crushed garlic
    2 (13 3/4 oz.) cans low-sodium chicken broth
    1 c. low-fat milk
    1 Tbsp. Dijon-style prepared mustard
    1/2 c. shredded low-fat Cheddar cheese
Preparation
    In a large saucepan, heat oil until hot.
    Add celery, potatoes, onions and garlic.
    Cook, stirring occasionally, until onions are tender (about 6 minutes).
    Add broth and bring to a boil.
    Reduce heat and simmer, uncovered, until potatoes are tender (15 to 20 minutes).
