Cajun Red Beans And Rice - cooking recipe
Ingredients

2 lb. pinto beans
1 (8 oz.) tomato sauce
1 medium bell pepper, chopped
2 large chopped onions
1 bag crab boil
4 to 6 dashes thyme
2 Tbsp. parsley
1 lb. smoked sausage
2 to 3 Tbsp. solid bacon grease
6 qt. water
salt and pepper
3 dashes Tabasco sauce or Louisiana hot sauce
2 Tbsp. ketchup
Preparation

Soak beans overnight in water.
Rinse and drain several times. Put beans in a large pot and add 6 quarts water, bell pepper, onions, thyme, parsley, bacon grease, tomato sauce, salt and pepper to taste.
Bring these ingredients to boil, then add one bag of crab boil.
(Note:
Do not break open bag of crab boil.) Add Tabasco and ketchup.
Cover pot and boil slowly until beans are done.
When done, remove bag.
Don't break bag.
One hour before serving, cut smoked sausage into small round pieces and brown in skillet.
Add to beans.
Cook rice.
Heat beans and sausage until good and hot.
Serve over rice.
