Cheesy Potato Casserole - cooking recipe

7 medium potatoes, peeled
1 small, chopped onion
1/4 tsp. pepper
1 can cream of chicken soup
2 c. shredded Cheddar cheese
1/4 c. melted butter
1 tsp. salt
8 oz. sour cream
3 Tbsp. melted butter
1 1/2 c. herb stuffing
Preparation

Slice potatoes; cover with water and boil 30 minutes or until tender.
Drain; let cool.
Combine 1/4 cup of butter, salt, pepper, onion, sour cream and soup.
Gently stir in potatoes and cheese. Spoon into lightly greased, large casserole dish.
Combine 3 tablespoons of butter and stuffing mix; sprinkle over potato mixture.
Bake, uncovered, at 350\u00b0 for 25 minutes or until thoroughly heated.
