Pear Preserves - cooking recipe

8 qt. firm pears
8 c. sugar
Fruit-Fresh
Preparation

Peel, core and slice pears into Fruit-Fresh mixed with water, or add Fruit-Fresh to sugar to prevent pears from turning dark. Drain well and layer 1 cup sugar to 1 quart pears, as you go.
Let set 2 to 4 hours.
There will be enough liquid to cook.
(Let set overnight to make pears tough, if desired.)
Cook until syrup is amber in color and thickens, about 2 1/2 hours.
Pears should be transparent and syrup should be thick, but not gummy when cooled. Test by dipping a little out and cool in refrigerator.
