Pineapple Pickles - cooking recipe

Ingredients
    1 (29 oz.) can pineapple chunks
    3/4 c. cider vinegar
    1 c. sugar
    6 cloves allspice
    3 whole cloves
    1 (3-inch) stick cinnamon
    1 tsp. powdered coriander seed
    dash of salt
    1 to 2 drops red food coloring
Preparation
    Drain pineapple, save 3/4 cup of syrup.
    Put 3/4 cup syrup and all ingredients (except pineapple chunks and coloring) in saucepan.
    Cook, uncovered, for 15 minutes.
    Add pineapple and boil briskly for 5 minutes.
    Remove from heat and add food coloring.
    Cool and pour into jar with tight fitting lid and refrigerate at least 24 hours.
    Serve very cold.
    Yields 20 servings.
