Country Captain Chicken - cooking recipe
Ingredients

1 hen or 2 fryers
1 can tomatoes
1 large green pepper, chopped
1 can mushrooms
1 pod garlic
1 Tbsp. curry powder
1 tsp. thyme
1 c. onions, chopped
1/4 c. raisins for sauce
1/4 c. almonds for sauce
1/4 c. raisins to garnish
1/4 c. almonds to garnish
2 c. cooked rice
Preparation

Cook chicken until done.
Remove from bone.
Make sauce of pepper, onion, tomatoes, mushrooms, almonds, raisin, thyme, curry powder and salt to taste.
Add chicken and let simmer on stove or in casserole for 1 hour.
Sauce should be thin.
Serve over hot rice.
Garnish with raisins and slivered almonds.
