Favorite Lemon Sponge Pie - cooking recipe

Ingredients
    2 1/2 c. sugar
    5 egg yolks (reserve whites for folding in later)
    4 heaping Tbsp. flour
    2 1/2 c. milk
    juice of 3 lemons
    rind of 1 lemon
    pinch of salt
    2 Tbsp. butter
Preparation
    Cream the butter, flour and sugar.
    (Keep 1/2 cup sugar for egg whites.)
    Add lemon juice and rind; mix well.
    Beat egg whites until stiff, then fold into first mixture gently.
    Pour into 2 unbaked pie shells.
    Bake at 450\u00b0 for 8 to 10 minutes.
    Reduce temperature to 350\u00b0 for 25 minutes or until done.
