Blushing Onion Soup - cooking recipe

Ingredients
    4 c. thinly sliced onions
    1 clove garlic, finely chopped
    1/4 c. butter
    1 (46 oz.) can tomato juice
    1 c. water
    2 tsp. beef flavor instant bouillon
    2 tsp. parsley flakes
    8 slices French bread, toasted
    2 c. (8 oz.) shredded Mozzarella cheese
Preparation
    In a large kettle, cook onions and garlic in butter until tender.
    Stir in tomato juice, water, bouillon and parsley. Bring to a boil.
    Reduce heat.
    Simmer, uncovered, 20 to 30 minutes, stirring occasionally.
